Grilled Pineapple & Mango with Balsamic Glaze

1/2 cup balsamic vinegar
3/4 cup unsalted butter, at room temperature
2 tablespoons honey
2 tablespoons fresh mint or basil leaves, chopped
1/2 teaspoon salt
1 ripe pineapple, peeled, cored, and cut into rings
1 ripe mango, sliced lengthwise
Skewers (metal skewers or wooden skewers soaked in water 1 hour)
Prepare grill for cooking.
In a small saucepan over high heat, boil the balsamic vinegar for 5 minutes to reduce by half. In a small bowl, combine the reduced vinegar with the butter, honey, basil and salt. Whisk the butter until smooth and all ingredients are blended.
Thread a pineapple ring onto each skewer and lightly brush with balsamic glaze. When fire is medium-hot (you can hold your hand 5 inches above rack 3 to 4 seconds), grill fruit in batches on lightly oiled grill rack, turning once, until browned and slightly softened, about 5 minutes total. Serve pineapple rings drizzled with balsamic glaze.
